Quick & Easy Granola

This super simple and cheap (a real money saver compared to the supermarket) Granola was a true long-term supply during my studies. It not only gives you a lot of energy, but also provides you with a much healthier Granola alternative than the conventional one.

All you need (for around one tray full):

  • 200g nut mix (I usually take ones with walnuts, hazelnuts, cashew nuts, pecan nuts and brazil nuts)
  • 50-100g puffed Quinoa or Amaranth (or both)
  • 100g dried plums, apricots or apples
  • 2-3 tbsp Agave syrup
  • 3 tbsp of coconut oil
  • Cinnamon as much as you like

How to:

Pre-heat the oven to 175° degrees. Chop the nuts as fine as you like (I personally like it a little finer). Put together into a bowl with the puffed quinoa and amaranth, mix and season with cinnamon. Heat the agave syrup together with some coconut oil in a bowl. Pour over the chopped nuts and mix altogether. In case it is too “dry” add some water or agave syrup. Spread over a tray and put it in the oven for around 12-15min. Check in between on the sides as they tend to get brown easily. For some extra crunch spread some coconut blossom sugar over the granola. Enjoy with some fresh coconut yoghurt and homemade raspberry compote:)
