Sunday Morning Pancakes with Homemade Raspberry Jam

   

 

Colourful Pancake Stack Heaven with homemade raspberry jam

Pimp your Sunday Brunch with this Pancake Heaven.

All you need is:

  • 150g Quinoa (alternatively buckwheat flour)
  • 100g Almond Flour
  • 250ml Plant Milk
  • 4 tbsp Agave Syrup or Coconut Blossom Sugar
  • Cocoa Powder

 

Topping:

  • 2 handful of (frozen) raspberries
  • 2 tbsp of chia seeds
  • Nut butter as you like (my favorite is hazelnut butter)
  • Fresh fruits (to make it extra skin-friendly I recommend taking fruits with a low glycemic index, such as blackberries, raspberries and blueberries)
  • Nut brittle (for an extra caramelized flavor, give them a slight roast in the pan with a mini blend of coconut sugar)

How to:

Let the quinoa soak in water over night. Rinse well and mix with the remaining ingredients until creamy. Split the mass and add cocoa powder in one of them. Panfry with some plant-based omega 3 oil or another plant-based substitute. Meanwhile heat up the raspberries with the chia seeds in a pot. Staple on a plat and top with the raspberry jam, fruits, nut butter and nut brittle. Enjoy :)
