The Best Ginger Cookies

The best cookies in the world...trust me:)

What you need:

  •  250g flour
  • 80g of vegan butter or margarine
  • 50g of coconut sugar
  • 50g of ground hazelnuts
  • 100g of pickled ginger
  • Walnut halves for decoration

For the icing:

  • Icing sugar
  • Raspberry jam
  • Lemon juice

How to:

Wash the pickled ginger under lukewarm water and remove from any syrup. Mix the flour, the ground hazelnuts, the sugar, the butter and the ginger together and form into a dough ball. Wrap in cling film and place in the fridge for 60min. Pre-heat the oven at 180 degrees. Roll out the dough ca. 0.5cm thick and cut out ca. 45 little cookies.  Bake for around 10-15min until slightly golden. Let cool down on a baking tray.

For the icing mix the icing sugar, lemon juice and tsp of raspberry jam as you wish together and spread over the cookies. Decorate with walnut halves as you wish.
