How micronutrients are absorbed and what you can do to improve the intake:
The way a food is cooked will affect how the vitamins and minerals in it are absorbed, for example, water-soluble vitamins can be lost during cooking, especially in boiling and pouring away the water. So, the best cooking methods for many vegetables are; steaming, sautéing, grilling, roasting, microwaving or blanching.
Some nutrients such as, beta-carotene is better absorbed when vegetables are cooked e.g., carrots, tomatoes and peppers (13).
Pairing foods or avoiding eating certain foods together will enhance absorption of certain nutrients, for example
Avoid eating oxalate-rich spinach and rhubarb with dairy foods, as oxalate inhibits calcium absorption. E.g., avoid putting spinach in a milk-based smoothie.
Pair vitamin C with iron containing foods, as vitamin C enhances the absorption of iron. E.g., if taking an iron supplement, eat an orange at the same time.
Avoid drinking tea and coffee and eating dairy foods when consuming iron-containing foods (1 hour before and after eating), as the tannins and polyphenols in tea and coffee and the calcium in dairy foods inhibit iron absorption. E.g., if taking an iron supplement, mid-morning or mid-afternoon is often a good time to take it, rather than with breakfast.
Ensure that fat-soluble vitamins are consumed with a fat source. E.g., an olive oil and balsamic vinegar dressing and toasted nuts and seeds to top salads and vegetables.
